History and Origin of Taleggio Cheese
Taleggio cheese has a long tradition dating back to before the 10th century, and there are records documenting its trade as early as the 13th century. This cheese emerged as a solution to preserve the excess milk produced by the inhabitants of the area. It was matured in natural caves or in the traditional casere di vallata , typical houses of the valleys.
Taleggio was originally known as stracchino , a term that covered all soft cheeses. This word comes from “stracch”, meaning tired, in reference to the exhausted cows that descended from the mountains to the valleys at the end of summer.
The current name, Taleggio , became popular at the beginning of the 20th century, when local producers decided to distinguish their cheese from others by adopting the name of their place of origin, the Val Taleggio, in the province of Bergamo.
Traditionally, this cheese was made in the mountains during the summer, but over time, its production spread throughout the Pianura Padana (Po Valley).
Today, Taleggio is produced and matured in the Lombardy and Veneto regions, under the supervision of the Consorzio di Tutela del Formaggio Taleggio (CTT), which has been responsible for guaranteeing its quality since 1981. Furthermore, since 1996, Taleggio cheese has had the Protected Designation of Origin (PDO) , which certifies its authenticity and origin.
