History and Origin of Mahón Cheese

The ancient Greek navigators were already aware of the rich livestock of Menorca, which they called Meloussa (land of cattle). There are records of cheese making on the island since the 5th century. During the Middle Ages, Menorcan cheese was traded throughout the Mediterranean, and in the 18th century, the port of Mahón became established as a key centre in trade with the East, giving its name to Mahón Cheese .

This cheese is made from freshly milked raw milk, moulded in a cotton cloth (fugase) and pressed by hand. It is then salted and aged in cellars after a drying process in ventilated rooms.
