What is the difference between anchovy and boquerón?
Boquerón is the result of marinating the anchovy in vinegar and oil. It is whitish in color and has a strong flavor.
The anchovy is the result of curing the anchovy in salt and allowing it to mature, resulting in reddish-brown fillets at the perfect saltiness.

Which Sanfilippo anchovy format is the best?
The quality of Sanfilippo anchovies does not vary depending on the format chosen. Sanfilippo Conserves has formats different from other canneries.
Firstly, we must differentiate between bocattos and delizias. Bocattos are slightly larger (we are talking about millimeters) and are the central part of the anchovy, i.e., the loin.
Delizias are whole anchovies, slightly longer than bocattos as they include the tips and are somewhat narrower.
Once you decide whether you prefer bocattos or delizias, the choice of format depends on the number of diners, so for 1 or 2 people, the delizias 16 fillets or the bocattos 9 are recommended. The delizias 16 can also be for 3 people.
For larger numbers, the delizias 24, 48, or the bocattos 30/32 are recommended, choosing among them based on the amount desired.
Additionally, for those who like to prepare anchovies themselves, they can choose the salt-cured formats with 4 or 8 large pieces. These formats contain salt-cured anchovies that need to be cleaned before enjoying.

How to preserve Sanfilippo Anchovies?
