Sanfilippo Conserves boasts 5 generations of expert preservers. Since 1896, they have been producing Santoña anchovies. Their Sicilian ancestors were among the first to settle in Santoña to engage in the production of salt-cured anchovies.

Since then, they have always maintained their roots and traditions, consistently basing their production on preserving the traditional methods used in the beginning, thereby ensuring the production of the best anchovies, becoming world leaders.

Santoña is a coastal town in Cantabria known for being a reference in the world of anchovies for over 100 years.

The first to settle in Santoña were Italians, specifically several families from Sicily, attracted by the quality of the Bay of Biscay anchovy. They found the highest quality specimen for anchovy production and established their factories in Santoña. Since then, the best anchovies in the world have been produced in Santoña.

One of those Sicilian families was Sanfilippo Conserves, which after 5 generations and 120 years, continues to produce what many experts consider the best anchovies in the world.

What is the difference between anchovy and boquerón?

Boquerón is the result of marinating the anchovy in vinegar and oil. It is whitish in color and has a strong flavor.

The anchovy is the result of curing the anchovy in salt and allowing it to mature, resulting in reddish-brown fillets at the perfect saltiness.

Sanfilippo Conserves has been dedicated to producing Santoña anchovies for 120 years. They are experts in traditional techniques and keep their salt-cured anchovies longer than usual, averaging 2 years.

Which Sanfilippo anchovy format is the best?

The quality of Sanfilippo anchovies does not vary depending on the format chosen. Sanfilippo Conserves has formats different from other canneries.

Firstly, we must differentiate between bocattos and delizias. Bocattos are slightly larger (we are talking about millimeters) and are the central part of the anchovy, i.e., the loin.

Delizias are whole anchovies, slightly longer than bocattos as they include the tips and are somewhat narrower.

Once you decide whether you prefer bocattos or delizias, the choice of format depends on the number of diners, so for 1 or 2 people, the delizias 16 fillets or the bocattos 9 are recommended. The delizias 16 can also be for 3 people.

For larger numbers, the delizias 24, 48, or the bocattos 30/32 are recommended, choosing among them based on the amount desired.

Additionally, for those who like to prepare anchovies themselves, they can choose the salt-cured formats with 4 or 8 large pieces. These formats contain salt-cured anchovies that need to be cleaned before enjoying.

In any format, you will find the highest quality anchovies.

How to preserve Sanfilippo Anchovies?

Sanfilippo anchovies should always be kept refrigerated. It is recommended to take them out 20 minutes before consumption, so they reach room temperature and can be enjoyed at their best quality.

Ideally, open the format you will enjoy completely, as opening the can may cause the anchovies to lose quality upon contact with air. If you need to store them, always keep them in the refrigerator and try to consume them as soon as possible.
