The "Picón Bejes-Tresviso" Denomination of Origin covers the Liébana region and the municipality of Peñarrubia. The towns of Bejes and Tresviso are the nerve centers of this cheese production, guaranteeing the authenticity and quality of Picón cheese.
Ripening in Cuevas
The ripening of this cheese is a natural process that takes place for a minimum of two months in limestone caves, characteristic of the region. This traditional method of ripening in natural caves gives Picón cheese its unique flavor and texture.

Characteristics of Picón Cheese
Rind: Soft, thin, unctuous and gray with yellow-greenish areas. Paste: Unctuous with varied cohesion, depending on the degree of fermentation. It presents a compact texture with visible eyes. Color: White with blue-greenish streaks. Flavor: Slightly spicy, intensifying when made with sheep's or goat's milk, or a mixture of both.
