1. Pincho of tuna, pickle, and anchovies with vinaigrette

Recipe for eight people. It will only take you five minutes.

Ingredients:

- 1 can of Tuna in Olive Oil

- 1 can of Anchoas de Santoña

- Pickles in vinegar

- Pitted olives

For the vinaigrette:

- 1/2 Green pepper

- 1/4 Onion

- Extra Virgin Olive Oil

- Vinegar

- Salt

Preparation:

- Cut the pickles in half and place the tuna inside.

- Wrap it with a Cantabrian anchovy.

- Top with an olive and skewer it with a toothpick.

- Once all the pinchos are arranged on the plate, drizzle with the vinaigrette made with finely chopped pepper and onion.

2. Pincho of stuffed pepper with omelette and anchovy

Plated recipe for eight people. Preparation time: 40 minutes.  Cooking time: 25 minutes.

Ingredients:

- 2 large Italian peppers, as straight as possible

- 3 potatoes

- 3 eggs

- A can of anchovy fillets from Santoña

- Oil and salt

- Bread

Preparation:

- Cook the peppers and let them cool, then slice them diagonally into thick rounds, about a finger's width. Slice the bread in the same way and lightly toast it in the oven or toaster.

- To assemble the pinchos, place a slice of stuffed pepper on each slice of bread and garnish with an anchovy. When presenting, you can skewer everything together and alternate red and green peppers. Serve cold or warm.

3. Canapés of Santoña anchovies, baby cucumbers, tartar sauce and black garlic

This recipe makes four servings.

Ingredients:

- 4 cloves of black garlic, chopped and left to marinate in olive oil from the day before

- 8 anchovies

- 4 baby cucumbers, sliced thinly

- 3 teaspoons of tartar sauce

- 1 hard-boiled egg

- Dill

- Mayonnaise

- Chives

- 2 slices of English sandwich bread, crusts removed and sliced lengthways

- 4 cherry tomatoes

- 1 tablespoon of cream

- 1 tablespoon of red pepper

- 1 tablespoon of grated spring onion

Method:

- Have all ingredients ready before assembling the canapé.

- Prepare the tartar sauce by adding, for every three tablespoons of tartar sauce, the cream, spring onion, finely chopped red pepper (without skin), and dill.

- Spread a generous layer of tartar sauce on the slices of crustless bread. Cut the slices in two and cover them with radishes. Halve the anchovies and place the black garlic, well-drained, in the centre of the canapé.

- Garnish with dots of mayonnaise and top with chives.

4. Pincho of anchovies with Brie cheese

Recipe for two pinchos.

Ingredients:

- 2 slices of toasted bread

- 2 salted anchovies

- 2 marinated anchovy fillets

- 2 slices of Brie cheese

- Chopped parsley

Method:

- Place a slice of Brie cheese on a slice of bread and put it in the oven for a few minutes until it melts.

- Add a marinated anchovy fillet and a salted anchovy fillet, then sprinkle with chopped parsley.

- 2 fillets of marinated anchoas

- 2 teaspoons of piquillo pepper jam

- Chopped parsley

Recipe for two pinchos.

Ingredients:

- 2 slices of toasted bread

- 2 fillets of marinated anchoas

- 2 tablespoons of cream cheese

- 1 strawberry

- Extra virgin olive oil

- Chives

Preparation:

- Spread the bread with cream cheese and place two anchovy fillets on top.

- Slice a strawberry into half-moons and place it on top of the anchovy.

- Chop chives and add along with a drizzle of olive oil.

8. Pincho de ensalada de anchoa from Santoña with cheese

Ingredients:

- Toasted bread

- Spreadable cheese

- Anchoas de Santoña

- Lettuce

- Tomato

- Olive oil

- Apple vinegar

Preparation:

- Spread the cheese on a previously toasted slice of bread.

- Place finely julienned lettuce on top, followed by the anchovy.

- To decorate, carefully add the tomato drops without breaking them.

- Dress with extra virgin olive oil and apple vinegar.

9. Pincho de melón with jamón and anchoa

Ingredients:

- Toasted bread.

- Melon.

- Iberian ham.

- Anchoas de Santoña.

- Extra virgin olive oil.

Preparation:

- Cut the melon into cubes and wrap with a slice of Iberian ham.

- Form small melon balls and skewer them along with the wrapped cubes on a toothpick.

- Garnish with a rolled anchovy.

- On a previously toasted slice of bread, place the skewers and drizzle with a little extra virgin olive oil.

10. Pincho de anchoa with cheese and peppers

Ingredients:

Anchoas from the Cantabrian Sea

- Peppers

- Cheese of your choice

- Olives

Preparation:

- Slice the peppers into strips about two centimetres wide.

- Place them in a bowl and dress with a drizzle of olive oil.

- Drain the peppers and transfer to a plate.

- Gently separate the anchovies and place them on a plate.

- To assemble the pinchos: skewer a cube of cheese, an anchovy, a piece of pepper, and an olive on a toothpick. Assemble all the pinchos and drizzle with olive oil. Set aside.
