Bonito del Norte caught off the coast of the Cantabrian Sea by its fleets. Captured in an artisanal way, generating a sustainable balance in the ecosystem and thus benefiting from the capture of the bonito being of the best quality.
QUALITY FROM ITS ORIGIN TO YOUR HOME (ITS HISTORY)
Catalina canning is a family business that began in 1999. Throughout these years the company has been developing a range of products selected from among the best, and what is very important, worked with the expert hands of the women of Santoña.
Every spring its factory begins a boiling period that lasts until June, the month in which the anchovy season in the Cantabrian Sea ends. They buy the fish in the auctions of the brotherhoods to take them to their factories where a delicate and careful process begins.
Its production is limited and by hand, in season, so its consumption is even more precious.
This range of products is made only with the best raw materials, that is, catches from the Cantabrian fleet made in season (coastal, in the summer months). The way you fish it also influences. The fishing gear used by our boats is the hook. In this traditional art of fishing, the Bonitos are caught one by one, with the effort of our sailors, in this way the flesh of the fish is not hit or scratched with the nets.
The so-called Tuna Fleet goes out to sea from June to September in search of the best Tuna in the North. As it is a seasonal fish caught with traditional arts, its extraordinary quality and freshness is guaranteed.

The bonito from the north, like all blue fish, is rich in omega-3, an essential fatty acid that should always be present in the diet, because in addition to regulating cholesterol levels and preventing cardiovascular diseases, it is essential for some functions basic of the organism.
Bonito is a good source of proteins of high biological value and has diverse amounts of vitamins and minerals. Among the vitamins are those of group B, such as B2 (more abundant in oily fish) and B9, although their content is less relevant when compared to other foods rich in these nutrients.
Compared to other fish, bonito has an outstanding content of vitamin B3 and B12, the latter in a higher quantity than many fish and meats. Bonito, being a fatty fish, also has fat-soluble vitamins, such as A and D, which accumulate mainly in its entrails. Regarding minerals, bonito has interesting amounts of potassium, phosphorus, magnesium and iron, as well as iodine.
