We use wild hook-fished Cod (Gadus Morhua) , specially cured Portuguese "Dourado", known for its exceptional quality . We carefully select the most gelatinous parts of the cod, which are cooked at an optimal temperature to preserve all its nutritional properties and its unique texture. Subsequently , all the bones, skins and impurities that may be in the fish are manually removed one by one so that it is in perfect condition for tasting.
