Its origins date back to the 6th century, when it was produced on farms near the small town of Gouda , located between Utrecht and Rotterdam, about 42 km from Amsterdam. This cheese began to be exported about 700 years later, which made it an international symbol.
Gouda cheese is made from whole cow's milk , pressed and cured in brine, although there are variants made from goat's and sheep's milk, as well as with different degrees of maturation. In this version, it is aged between 24 and 36 months, which classifies it as a fermier cheese , that is, a farmhouse cheese. This guarantees that it is produced by the same people who manage the farm, ensuring exceptional quality.
At its ripening point, Gouda with truffle has a firm and crunchy texture. It has a deep flavour, with roasted nuances and a sweet touch reminiscent of black liquorice or caramel. On the palate, it is slightly rough and offers an incomparable gastronomic experience.
