The Acorn Ham is a type of Serrano ham from the Iberian breed pig , highly appreciated in the gastronomy of Spain and in the gastronomy of Portugal , where it is called presumed Iberian, and is often considered as an article of haute cuisine and delicacy . The main characteristics that distinguish Iberian hams in their quality derive from the purity of the breed of animals, from the extensive free-range breeding of the Iberian pig in woodlands where they can move widely and perform physical exercise , from the diet that follows the pig in the montanera period, and finally the curing of the ham, which usually lasts between 24 and 48 months, needing more curing time the larger the size of the piece and the greater amount of acorn or nuts that the pig has ingested .
It is characterized by an intense aroma, delicate flavor and slightly fibrous texture, melting in the mouth, leaving a persistent aftertaste characteristic of acorn. It has a characteristic color that varies from pink to purple-red, bright, with filtration of pinkish fat, rich in oleic acid, which makes it unctuous to the touch and improves its organoleptic qualities.
