What do we find in this product?
The beautiful laminate is obtained from the trunk of the fish, but in this case, the way of elaboration as thin slices allows the oil to penetrate better in its texture, a circumstance that makes it much juicier than in its traditional way of presentation in " trunks ”Due to this characteristic, the bonito laminate has a low fat content. Due to this circumstance, compared to the belly, it is almost similar in texture and flavor but more suitable for people who do not tolerate high fat content. Bonito is a seasonal product that is only caught during the summer months.
The so-called Tuna Fleet goes out to sea from June to September in search of the best Tuna in the North. As it is a seasonal fish caught with traditional arts, its extraordinary quality and freshness is guaranteed. Appetizer, skewer, salad ingredient ... Without a doubt, it is the star of canning for any occasion. Its production is limited, in season, so its consumption is even more precious. We make this range of products only with the best raw materials, that is, catches from the Cantabrian fleet made in season (coastal).
The subsequent cooking and handling are done carefully so that these products maintain all their characteristics and properties. Once the production process is finished, our preserves are stored in the cellar for a period before they are released on the market; in this way, this preserve increases its flavor and quality. Consumption recommendation: put on a slice of good bread (firewood) a little candied onion and on top the bonito (laminated belly, trunk, laminated trunk or crumbs). The perfect pairing for this preserve is red or white crianza wine, such as Rueda or Albariño.

The bonito from the north, like all blue fish, is rich in omega-3, an essential fatty acid that should always be present in the diet, because in addition to regulating cholesterol levels and preventing cardiovascular diseases, it is essential for some functions basic of the organism. Bonito, like the rest of the fish, is a good source of proteins of high biological value and has different amounts of vitamins and minerals.
Among the vitamins are those of group B, such as B2 (more abundant in oily fish) and B9, although their content is less relevant when compared to other foods rich in these nutrients. Compared to other fish, bonito has an outstanding content of vitamin B3 and B12, the latter in a higher quantity than many fish and meats. Bonito, being a fatty fish, also has fat-soluble vitamins, such as A and D, which accumulate mainly in its entrails. Regarding minerals, bonito has interesting amounts of potassium, phosphorus, magnesium and iron, as well as iodine.
