Difference between nougat from Jijona and nougat from Alicante.
Both follow a fairly complex and very similar production process . Its main difference is that the one from Jijona is purified while that of Alicante, the mass obtained by mixing the egg white, honey and toasted almonds, is dried and introduced into the molds to be later cut and packaged. .
In addition, the Alicante nougat does not go through the machines in the form of a giant mortar where it is given that touch that characterizes the Jijona nougat.
