Authentic craftsmanship
Conservas Angelachu was created in Santoña in the late 90's, with the experience of four generations of professional fishmongers and canners. This family business follows the motto of “Authentic artisan tradition” . In its elaboration they look for the quality of the raw material with the seasonal fish, obtaining it through a manual artisanal capture looking for the ideal size. They are very committed to taking care of original and traditional processes .
The fish comes directly from the main markets, selecting fresh fish of the ideal size and quality. Already in the factory they begin with the artisan elaboration of salting salting. They take great care of all their evolution to achieve the highest quality in their products. After reaching the maturation time, they elaborate the anchovies one by one by means of the hand rubbing method, which involves a lot of work and therefore a higher cost, but they achieve an unmatched quality in the anchovy . All its products stand out for their pristine presentation, texture and flavor.
Albacore tuna vs Light tuna
The bonito del norte or albacore tuna is found in the north of Spain, the Cantabrian Sea. Its coastline begins in summer and lasts until October normally. To ensure quality, it is caught with selective fishing, one by one, obtaining a higher quality meat.
Light tuna is characterized by the yellow color of its fin, it is the most caught and the most used for canning. Although its flavor is pleasant and it is part of the Mediterranean diet, its quality is intermediate. It is a kind of open water of tropical and subtropical seas.
The bonito del norte is softer and more flavorful and has less fat than the light tuna.
